Lauren has always been a die-hard foodie. As a sixth-generation Texan, Lauren grew up on good ol' southern cooking with both of her grandmothers, where the passion for food sparked an absolute LOVE for cooking.
Lauren has a Bachelors degree in Business Marketing and a "minor" in snowboarding from Colorado State University. After college, Lauren worked in insurance sales, real estate marketing, graphic design, and then as the VP of Marketing for a brand new pharmaceutical dispensing company out of Chicago. After 2 labor-intensive years of learning every aspect of marketing a pharmaceutical business, endless concerts and fine dining, Lauren left cloudy ChiLand for sunny, South Florida.
Once there, persuasion from her grandmother, led Lauren to enroll and graduate with an Associates in Culinary Arts degree from Keiser University. Culinary degree in-hand, Lauren went on to work hot line, pantry, sandwiches, deli, customer service, and catering jobs at both high-end resorts and gourmet markets.
After 5 years in always-summer Florida, Lauren returned to her "happy place": Vail, Colorado where she enjoys snowboarding, camping, white water rafting, & all sorts of other mountain town adventures.
Lauren loves creating new dishes and changing up the common comfort foods she grew up on by adding her personal twist. A fusion of old school comfort food recipes with innovative seasonings and fresh ingredients, mixed with a little Southern flare.
In the summer of 2014, Lauren started her own catering company, NewAmericanFoods.com based out of a shared location in Minturn, CO. Since then, she has moved into her current location at the NE corner of Edwards Riverwalk (between Lacy's & the Bookworm), where Lauren's Kitchen was born in October of 2018.
